- Half an onion and slice each half into medium sized slices.
- Rough chop garlic
- Cut slits in pork loin and rub down with pork rub ( I eyeball it)
- Put pork in large dutch oven or pot.
- Dump the onions, garlic, chili powder, and red pepper flakes over meat
- Cover meat with water
- Cover with lid and simmer till done ( around an hour)
- Let cool and the shred pork
- Mix lard and 1 can of broth until fluffy
- Mix masa, baking powder and salt together
- Mix wet and dry together until it forms a spongy dough
- Spread dough mixture onto soaked corn husk 1/4" - 1/2" wide
- Spread shredded meat on top of dough. Fold dough on top of meat so it forms a little package.
- Fold corn husk over mixture and fold ends under.
- Steam for about an hour

1 teaspoon Baking
powder
1/2 teaspoon salt
2/3 cup lard

1/2 lb Pork loin
1 onion sliced
3 cloves garlic
chili powder ( to taste, I used a lot)
red pepper flakes ( to taste, I like a lot)
Pork rub (onion powder, garlic powder, salt,
pepper, paprika, chipotle powder)

We mixed the extra pork with rice and topped with lime & garlic salsa and sour cream.
